茄子とひよこ豆のチリ

Garbanzo Eggplant Chili
Ingredients
makes 4-6 servings.
3 tbsp. olive oil
1 large eggplant peeled and cut into 3/4 inch cubes
3 cup diced tomatoes (4 to 5 medium)
1 can sliced black olives, drained
1 tbsp. chili powder
1 tsp garlic powder
1/8 tsp black pepper
1+1/2 C cooked or 1 can garbanzo beans, drained
1. In a large saucepan, heat oil over medium heat.
2. Add eggplant, cook until transparent, about 5 minutes.
3. Add tomatoes, olives, chili powder, garlic powder,
black pepper and 1 cup water. Bring to boil
cover and reduce heat.
4. Simmer, stirring occasionally, until vegetables are
tender, about 15 minutes.
5. Stir in garbanzos and cook until heated through,
about 5 minutes.

地中海風サーモン (手早く簡単)

Mediterranean Salmon (Quick and easy)
Ingredients
makes 4 servings.
1 medium onion, chopped
2 tbsp. Extra virgin olive oil, divided
1 can cannelloni beans, rinsed and drained
1/2c. chopped pitted olives
1 c. halved grape tomatoes
2 tbsp. chopped fresh basil
4 salmon fillets
salt and pepper
1. Saute onion in 1 tbsp. hot oil until softened
2. Add beans, olives, and tomatoes; cook over
medium heat about 2 minutes
3. Remove from heat and stir in basil.
4. Sprinkle salmon with salt and pepper.
5. Cook in large nonstick skillet with remaining oil
over medium-high heat 3 minutes per side.
6. Set on top of bean mixture and serve.

簡単♪チキンとアーモンのサラダ

Chicken and Almond Salad
Ingredients
8 slices cooked chicken breast
1C chopped celery
1/2C slivered almonds
1 head lettuce
1 C presoaked raisins
Mayonnaise
1. Dice chicken; mix with raisins, almonds, and celery.
2. Arrange on lettuce;
3. cover with mayonnaise. Chill.

Apple Cake (very, very easy)

Slice 2 large peeled apple into a bowl.
Add:
90g sugar (white, brown, or combination)
120g dried fruit, cut up
(e.g. dates, apricots, sultanas, fruit medley, etc.)
1 tsp cinnamon
150g self-rising flour
80g butter, melted
2 eggs, slightly beaten

アメリカ人の懐かしい味〜チリ
Chili
Ingredients
1 onion - chopped
1 paprika - diced
1 tablespoon oil
360 cc vegetable broth
6 garlic cloves - chopped
2.5 cups beans - any kind (I like adzuki - hanamame and chipeas)
1 can chopped tomato
2-3 potatoes- peeled and chopped
2 table spoons cumin
2 table spoons chili powder
2 tablespoons oregano
1 cup corn kernals
salt and pepper
