CRAB CHOWDER

CRAB CHOWDER
ingredients
serves 3-4
25g smoked bacon
1/2 small green pepper
175g potatoes
12g butter
1/2 onion, finely chopped
1/2 tbsp flour
225ml fish stock
225ml cream or milk
salt and grated nutmeg
pinch of cayenne pepper
50g crab meat
150g tinned sweetcorn, drained
1. Trim the rind from the bacon and chopped finely.
Halve the green pepper, remove the seeds and cut
into 6mm in dice.
Peel the potatoes and dice the same way.
2. Fry the bacon over a gentle heat in a large pan
until the fat begins to run.
Add the butter, and when melted, add the green
pepper, potatoes and onion.
Fry gently for 7-8 minutes until slightly softened,
stirring occasionally.
3. Sprinkle the flour over the bacon and vegetables
and then stir for a few minutes until the mixture
becomes golden and frothy.
Blend the fish stock with the seasoning and spices.
Bring to the boil, cover and simmer for 15 minutes
or until the vegetables are tender.
4. Flake the crab meat and stir into the pan along with
the tinned sweetcorn.
Cook fro a few minutes so it heats through, adjust
the seasoning to taste and then serve.
