Blueberry Yoghurt & Jelly
Ingredients: serves 4
450ml plain yoghurt
100g sugar
1 tsp finely grated lemon zest
1 sachet (4 tsp) gelatine powder
225g blueberry
Method:
1. Mix together the yoghurt, sugar and lemon zest.
In a small saucepan, sprinkle the gelatine onto 2
tbls water and leave to soak for 10 minutes.
Warm gently until clear.
Stir the gelatine into the yoghurt.
As soon as it begins to set, stir in most of the blueberries
and turn into dessert dishes.
Chill before serving with the remaining berries.
