イカのガーリック炒め

Calamari in garlic
ingredients serves 6
1.4kg squid
175g butter
6 cloves of garlic , crushed
3 tbs chopped parsley
grated zest of 1 large lemon
juice of 1 large lemon
salt and ground black pepper
1. To clean the squid:
pull out the head and entrails, remove backbone and outer skin.
Rince body and dry.
Cut body in half lengthways
Cut off tentacles and reserve.
2. In a large fring-pan, melt the butter until bubbling and
add the garlic.
Fry the squid quickly for about 3 minutes turning once.
3. Add the parsley, lemon zest and juice.
Season with salt and pepper.
Tip the squid carefully onto a serving dish and serve at once.
