PEPERONATA

 ingredients serves 4

2 red bell peppers cut in pieces
2 yellow bell peppers cut in pieces
1 medium size onion cut in slices
1 crushed clove of garlic
2 tbsps of tomato sauce or diced ripe tomatoes
2 tbsps extra virgin olive oil
fresh basil
freshly ground pepper
salt to taste

 



1. Gently cook the onion in the oil for 10 minutes.
Add the garlic.
Put in the tomatoes (or the tomato sauce) and the bell peppers
cut in pieces.
Add salt and pepper.
2. Cook, covered, for 15 minutes then for another 1/2 hour
without the lid on low-medium heat.
3. At the end add some fresh cut up basil.

You can serve Peperonata as a vegetable dish or as an appetizer.
It is recommended in a buffet.
